Introduction of cassava flour production line
The basic unit operations in cassava flour production from fresh cassava roots are:
Sorting and Weighing: The tubers are sorted to select the wholesome roots for production. The tubers are then weighed.
Peeling section during the cassava flour processing line : The weighed cassava roots are peeled manually to reduce high peeling loss associated with mechanical peelers due to irregular shape of cassava root.

Drying: Granulation process is followed by drying operation to produce cassava flour of desired quality.

Introduction of cassava flour processing machine.
The cleaned roots coming from the root washing unit are fed into the chopper and being chopped into coarse pieces and then sent to the rasping-hopper.
The feed hopper contains a twin screw conveyor which distributes the chopped roots into the different feed units of the rasping-hopper.
The chopped roots are dosed and distributed by speed controlled screw conveyors to the rasper. The dosing screw conveyors are attached on the bottom of the hopper.
The rasper disintegrates the roots into a suspension of free starch granules, fibers, bounded starch and fruit water containing solubles such protein, sugars and minerals.
During rasping process water is added for dilution.
As the rasping efficiency (the percentage free starch gained) is crucial for the yield of the process, the rasper is designed to achieve the highest possible rasping efficiency.
During the period of saw blade changing: one rasper is stopped, the other rasper runs at full capacity. The small capacity drop is buffered by the big crude starch milk tank.
The integrated roots (root-slurry) is discharged in the root-slurry collecting gutter.
The gutter is equipped with level control.
A de-airing centrifugal pump (frequency controlled) discharges the root-slurry from the gutter to the de-sanding unit.
Before going to the de-sanding unit, the root slurry passes a static strainer. (one in operation and one standby)

Cassava flour making machine introduction :
To produce high qualtiy cassava flour,the fresh cassava roots harvested 10-12 months after planting. The fresh roots must be healthy without rot and well handled from farm. The roots should be processed within 24 hours after harvesting.
Peeling: Peel with clean stainless steel knives and remove woody tips.Ensure that the rind is completely removed to ensure low fiber and white color of the finished product. Avoid excessive waste of roots during peeling.
Mechanical peelers are available in medium to large scale processing.
Washing:Wash peeled roots thoroughly in clean water to remove pieces of peel, sand and other dirts. Pieces of clean cloth and used sack can also be used to facilitate washing.
Grating:Grate roots properly in clean stainless steel grater to obtain uniformly smooth mash. The grated mash must be uniformly smooth without lumps. In case of non-uniform mash, grate again until smooth mash is obtained. The smoothness of the mash determines the quality, yield and market value of the finished cassava flour.
Sifting or Sieving: Cake breaking is done using clean hands followed by sifting with non-rusting sifter into clean basin. It can also be done by placing the pressed cake back into the grater and disintegrate for drying. Sifter made of stainless steel material is preferable.
Drying: Dry the disintegrated/sifted cake in a dryer to reduce moisture level to acceptable level according to national regulatory standards. Sun drying, use of mechanical or solar dryer can be employed to reduce the moisture.
Milling:Milling is done to obtain fine textured flour using hammer mill or disc attrition mill.
Storing: Store in a cool, dry, well ventilated, insect and rodent free store/enclosure. Storing in this way, the cassava flour can be stored for at least eight months.

Step 5: Dry to moisture level of below 14% The drier the product the longer the storage life or the shelf life.
Step 6: Bag into sacks of 50kg and send to the point of sales.
